Now that the bright sunny weather is finally here, we thought we’d share some of our favourite summer dishes. Over the next few months we’ll post all our of refreshing dishes and drinks.
One of my (Sarah) favourite summer desserts is a simple ice cream cake type dish. It’s really simple, and is always a crowd pleaser when I make it.
1 1/2 cups graham wafer crumbs
1/2 cup sugar
1/4 cup melted butter
Mix in a bowl then line the bottom of a spring form pan.
2 egg whites
3/4 cup brown sugar
2 cups frozen strawberries, partly thawed
2 tbsp. lemon juice
1 cup whipping cream
Beat all but whipping cream on high speed (about 10 minutes) until thickened and volume is increased. Beat whipping cream until stiff and fold by hand into strawberry mixture. Pour into crumb lined pan. Cover and freeze overnight. Serve garnished with whipped cream and fresh strawberries, if available.
So, I enjoy a lot of light and airy things come summer. For desserts, I love a Strawberry trifle. I love this dessert because it is so diverse. You can have your base recipe and then add whatever it is that you want to make this your own.
For this recipe you need a trifle bowl, one that you can put your work on display in. I regular glass bowl could work, bu a cup like bowl on a pedestal looks amazing.
Strawberries cut into slices (about 4 cups)
Pound Cake (use store bought, you have enough work with the strawberries)
Whipped cream (you could use cool whip, but real whipped cream is the best.)
Layer all the ingredients: pound cake cut into slices or cubes, whipped cream, strawberries repeat until the bowl is full. And flourish the top with extra strawberries and whipped cream.
Some extra ingredients you could use, caramel sauce, chocolate sauce or shavings, chunks of pre-made plain cheese cake (this one is my favorite), other berries, among many other things.
